3 Simple Recipes to Cook Fish

We all know that the love of fishing is not only the experience from catching this fishes, there is another part of fishing that we subtly love. Whether it is caught from a local fishing pond or the open sea. Eating a freshly cooked fish is the best way to commemorate victory from fishing after the many hours spent under the hot sun or the lonely quiet night awaiting for a hook on.

Some of us will pass on our catch to our wife, mother or grandmother who is the head chef of the household. Some of you wants to taste the freshly caught fish immediately and drive off to a local Zi Char (local Seafood Shop which are usually located in a coffeeshop) to get it cooked asap. 

But I thought to myself, maybe I should give it a go at cooking a simple and delightful fish dish for my family. I immediately seek recipes from my grandma Susan, who has been making her magical touches in the kitchen and provided so many yummy dishes for the family for so many years. Her many years experience of cooking local dishes and working at a French restaurant before have always excites me to learn cooking from her due to her diversity in food knowledge.

But lets start simple and learn the quick way of cooking comfort fish dish that we generally love to order at a restaurant.

 

SAMBAL SEABASS

Ingredients you need:

Step 1

Rub the Seabass with Sea Salt and Corn Flour on both sides of the body. Drizzle sufficient amount of cooking oil to the heated pan. 

Step 2

Fry fish for about 10mins until it turns golden and crispy.

Step 3

Scoop up fried fish and place on top of serviettes to absorb excessive oil.

Step 4

**Cooking the Sauce:

Fry the sliced onions till its golden brown.
Add 4-table spoon of sambal paste with Asam water. Pour sauce over fried seabass. Decorate the dish with a few coriander leafs. 

Step 5 (EAT)
Wala! Dig into the tender and spicy Sambal Seabass!

Sweet and Sour Fried Grouper

Ingredients you need:

 

Step 1
Slice the Red Bell Pepper, Onions and Pineapple. 

Step 1
Rub the Grouper with Sea Salt and Corn Flour on both sides and the body. Heat up Oil

Step 2
Fry fish for about 10mins until it turns golden crispy.

Step 3
Scoop up fried fish and place on top of serviettes to absorb excessive oil.

Step 4
**Cooking the Sauce:
Fried pineapple, red bell pepper, onions for about 2-3 mins.
(optional) thicken gravy with ½ tablespoon of corn flour and a little water. Pour sauce over fried Grouper. Decorate the dish with a few coriander leafs. 

Step 5 (EAT)
Wala! Dig into the tender and juicy Sweet and Sour Fried Grouper!

STEAM FISH POMFRET

Ingredients you need:

Step 1
Slice the vegetables (Ginger, Salted Preserved Veg, Tomato, Chilies)

Step 2
Rub the Pomfret with Sea Salt on both sides and the body. 

Step 3
Boil water for steaming.

Step 4
Spread sliced ginger, salted reserved Veg, sliced Tomato and sliced Chilies on the Pomfret fish.                                                                                                

Step 5
Pour in the mixture of Mirin, Sugar and Light Soya Sauce. 

Step 6
Sprinkle sea salt, black and white ground pepper over fish.

Step 7
Steam for the size of a 600g fish for about a good 15mins.                            Scoop up some of the juicy gravy and pour it over the Pomfret.               Decorate the dish with coriander leafs.  

Step 7 (EAT)
Wala! Dig into the tender and juicy Steam fish Pomfret!
